The mould is insulated at the sides, so the ice grows in one direction only. After 18 to 30 hours in the freezer you have crystal-clear ice; a small white patch at the bottom is normal.\u003c\/p\u003e\u003ch3\u003eWhy does a large ice sphere melt more slowly than ordinary ice cubes?\u003c\/h3\u003e\u003cp\u003eA large ice sphere has less surface area relative to its volume, and ice melts through the surface that touches the whisky. Of all shapes, a sphere has the smallest surface per volume. As a result, a 6 cm ice sphere chills your glass evenly while melting much more slowly than a handful of small cubes. That keeps your whisky full of flavour for longer.\u003c\/p\u003e\u003ch3\u003eWhy does ice from the freezer turn cloudy?\u003c\/h3\u003e\u003cp\u003eIce turns cloudy because water in an ordinary mould freezes from the outside in and traps air and minerals in the centre. You see those bubbles as a white, matt core. Filtered water and slow freezing help a little, but the direction of freezing is the main factor.
