Duncan Taylor

Duncan Taylor Octave Tullibardine 10 YO 2013

Tullibardine is a Highland distillery known for its soft, honey-sweet style — a whisky that naturally brings plenty of body and ripe fruitiness. Duncan Taylor gave this 10-year-old single cask further maturation in an Octave: a small cask of only around 50 litres, much smaller than a standard bourbon barrel. That small volume means a far greater contact surface between wood and whisky per litre, so maturation is more concentrated and intense in a short time than in a regular cask.

Why I chose this

Tullibardine naturally brings honey and ripe fruit, and in this small Octave cask that has grown into a warm, full-bodied dram. I chose it because it shows so clearly what the size of a cask can do. Serve it after dinner with a crème brûlée.

Frequently Asked Questions

Why did this Tullibardine mature in an Octave of around 50 litres?

To intensify the maturation. An Octave is much smaller than a standard bourbon barrel, giving more wood contact per litre of whisky. In this ten-year-old, that heightens Tullibardine's natural honeyed sweetness into toffee, caramel and ripe stone fruit, with a hint of spicy oak. It is a single cask.

Is this Tullibardine Octave too sweet for lovers of dry whisky?

It is distinctly sweet, with honey, toffee and caramel, and a warm, lingering sweet finish. If you are looking for a dry, spicy whisky, it is less of a match. The oak does, however, bring a subtle woody close that keeps the sweetness in balance, especially if you add a few drops of water.

Which dessert or cheese goes with this Tullibardine?

Crème brûlée is a natural choice: the caramelised sugar echoes the toffee and honey. Cheese with fig jam also works, as the saltiness of the cheese keeps the whisky's sweetness in check. Chocolate lovers can opt for dark chocolate with a caramel filling. Enjoy the whisky neat or with a drop of water.
