Thy

Thy Spelt-Rye

Whereas most whiskies are made from barley, Thy Whisky opted for an unusual grain mix: organic spelt, rye and barley, matured in new American oak casks. The result is a spicy, characterful whisky that departs clearly from the classic single malt profile — a true "field-to-glass" experiment from the Danish farm distillery.

Who is it for?

For the adventurous taster who wants to look beyond barley and enjoys a lively, spicy character.

Food pairing

Pairs well with rye bread, smoked sausage or a punchy cheese board.

Why I chose this

Spelt and rye instead of barley alone: I bring out this bottle when someone says whisky always tastes the same. It is spicy, bready and headstrong, exactly what a farm distillery should be allowed to show. For the curious taster who likes to colour outside the lines.

Frequently Asked Questions

Why is the Thy Spelt-Rye not a single malt?

Because single malt is made exclusively from malted barley. For this whisky Thy uses a mix of organic spelt, rye and barley, all from its own farm in Jutland. That is why it is called a spelt-rye whisky, with a clearly spicier profile than a classic single malt.

What does new American oak do to this whisky?

A new, previously unused cask gives off a lot of flavour quickly, mainly vanilla and wood spice. In the Spelt-Rye that reinforces the peppery bite of the rye and adds a hint of vanilla on the nose. The result sits in Spicy & Lively on our Flavour Compass.

What should you pair the Thy Spelt-Rye with?

Savoury, spicy flavours. Rye bread, smoked sausage or a punchy cheeseboard match the rye and cinnamon in the whisky nicely. Serve it neat; at 48.5% ABV you can add a few drops of water to open up the grain notes further.
