Thy

Thy Single Malt

Thy Whisky is one of Denmark's best-known "field-to-glass" distilleries: all of its grain is grown on its own Gyrup farm in Thy, Jutland, where grain has been cultivated since 1773. This Single Malt is the flagship of the core range, distilled from organic pale malt with a small proportion of beechwood-smoked malt — a nod to the Danish tradition of smoking meat, fish and cheese over beechwood.

Why I chose this

Thy is a farm distillery in Jutland whose grain grows on its own land, and that story moves me. This Single Malt is their calling card: soft, grainy and with a hint of beech-wood smoke in the background. I like to pour it for anyone curious about how whisky can taste outside Scotland.

Frequently Asked Questions

What does field-to-glass mean at Thy Whisky?

That all the grain for the whisky is grown on the distillery's own Gyrup farm in Thy, Jutland, where grain has been cultivated since 1773. The distillery therefore knows exactly where every grain comes from. This Single Malt uses organic malt, which explains its pure, grainy character.

Why is there a hint of smoke in the Thy Single Malt?

Because a small share of the malt has been smoked over beech wood, not peat. It is a nod to the Danish tradition of smoking meat, fish and cheese over beech. The smoke stays subtly in the background, which is why the whisky sits in Smooth & Fruity on our Flavour Compass.

Which casks does the Thy Single Malt mature in?

In a combination of first-fill bourbon casks and oloroso and PX sherry casks. The bourbon casks bring vanilla and softness, the sherry casks a touch of fruit and depth. The 2024 edition is bottled at 48% ABV, not chill-filtered and with no colouring, in a 70 cl bottle.
