The Uncharted Whisky Co. is an independent bottler from Fintry, Scotland, founded in 2020 by Jack Breslin and Dana Bulloch. Their releases are deliberately presented without the distillery name on the label — hence "off the grid malts" — and always without colouring or chill filtration. This Blue Collection 8 Year Old was assembled from a handful of ex-bourbon casks from the Aultmore distillery: an unpeated, refined Speyside single malt.
Our Flavor Compass divides whisky into four flavor areas. The dot indicates where this bottle stands.
Soft & FruityFor moments of peace & relaxation
Medium length, fresh and lightly sweet.
For anyone looking for a fresh, unpeated Speyside discovery from a transparent, modern independent bottler.
Lovely with white fish, fresh pineapple or a light lemon tart.
At Uncharted the distillery is deliberately not splashed across the label, and that is exactly what I like: you taste first, the story comes afterwards. This eight-year-old Aultmore is fresh and refined, ideal for a summer evening or as the first glass of a tasting. It shows how pure ex-bourbon can taste.
It is a deliberate choice: their releases are presented as 'off the grid malts', so that flavour rather than the name takes centre stage. This Blue Collection 8 Year Old comes from the Aultmore distillery in Speyside; we state that on the product page so you know what you are buying.
Yes, it is unpeated, light and fruity, and sits in Smooth & Fruity on our Flavour Compass. It does not overwhelm your palate straight away, so richer or smoky whiskies can still be tasted properly afterwards. At 46% ABV and without chill filtration, it still has plenty of body.
Light, fresh dishes work best. Think of white fish, fresh pineapple or a light lemon tart: they echo the fruity, floral character of the ex-bourbon casks. Serve the whisky neat or with a few drops of water so the fruit comes through well.
