Denmark

Danish whisky at Mood4Whisky comes from Thy Whisky, a field-to-glass distillery in north-west Jutland. All the grain is grown organically on the company's own Gyrup farm, where the distillery also stands. You can taste the Danish countryside in every bottle, from the light single malt to the beech-smoked Bøg.

More about [title]

What makes it special is that the four Thy bottles together cover all four profiles of the M4W Flavour Compass: Thy Single Malt is Smooth & Fruity, Thy Caramel Malt Rich & Sweet, Thy Spelt-Rye Spicy & Lively and Thy Bøg Smoky & Powerful. That makes this a lovely collection for getting to know the Flavour Compass within a single distillery. Read more about the makers on the Thy Whisky page.

Is whisky really made in Denmark?

Yes. Since the start of this century Denmark has had a growing whisky scene, with distilleries spread across the country. Thy Whisky is a well-known example: founder Nicolaj Nicolajsen decided in 2010 to make whisky from the grain grown on his own farm, and the first bottling appeared in 2014. Danish whisky falls under the same European rules as other whisky: at least three years of maturation in wooden casks and a minimum of 40% ABV.

What does field-to-glass mean at Thy Whisky?

Field-to-glass means the whole chain happens in one place: from growing the grain to the whisky in the bottle. Thy grows organic barley, rye and spelt on its own Gyrup farm in Thy, where the land has been farmed for centuries. As a result the distillery chooses its own grain varieties, such as the barley varieties Odyssee and Babushka, and you can taste the difference between grains directly in the glass.

Why does Thy smoke its malt with beech wood instead of peat?

Smoking over beech wood is an old Danish tradition for fish, meat and cheese; bøg is Danish for beech. Thy applies this technique to malt. Beech smoke is woodier and less medicinal than peat smoke and is reminiscent of grilled wood and smoked bacon. In the Thy Bøg that smoke plays the leading role, while the Thy Single Malt and the Caramel Malt contain only a small share of beech-smoked malt.

How old are Thy's whiskies?

Thy's whiskies are relatively young, as the distillery has only been bottling since 2014. The Thy Caramel Malt is four years old; the other bottles carry no age statement. Here, age matters less than raw material and cask: thanks to maturation in first-fill bourbon and sherry casks and in new American oak, these whiskies gain plenty of flavour, at strengths of up to 54.5% ABV.

Which Thy whisky suits your taste?

If you like mild and fresh, choose the Thy Single Malt with apple, vanilla and a hint of smoke. For a rich, sweet dram, the Thy Caramel Malt with caramel, dried fruit and cocoa is the right choice. If you are after spice, the Thy Spelt-Rye with rye bread and pepper fits the bill. And if you love smoke, go for the Thy Bøg with beech smoke, caramel and black pepper.
