Thy
Thy whisky is Danish single estate whisky from the family estate Gyrup in Thy, in the northwest of Jutland. The family grows the grain themselves, organically, and malts, distills, and ages the whisky on the same estate. Here you will find four bottles that showcase how much flavor is in the grain, from the smooth Single Malt to the beechwood smoked Bøg.

Thy prefers to use different grains and malt types rather than exotic casks. The Spelt-Rye combines spelt, rye, and barley, and the Caramel Malt uses caramel malt that you also find in dark beer. This way, you can taste a different grain story with each bottle.

What does single estate mean for Thy whisky?
That grain growing, malting, distilling, and aging all happen on one estate.Thy cultivates its grain organically on its own estate in Thy and built its own malting and distilling facility between 2016 and 2019. This means the entire journey from field to bottle is in its own hands. That is rare, as most distilleries purchase their malt. You can taste it in the grain-rich character of every bottle.
How smoky is Thy Bøg compared to a peat whisky?
Clearly smoky, but softer and warmer than most peat whiskies. Bøg is Danish for beech: Thy smokes the malt over beech wood, just as fish and meat are smoked on the Danish west coast. That smoke is more reminiscent of smoked ham and campfire than iodine and seaweed. If you find Islay whisky too medicinal, Bøg may surprise you. In our Flavor Compass, it is categorized under Smoky & Powerful.
How does the Thy Spelt-Rye taste?
Spicy and bready, with pepper and a dry, grain-rich note. The recipe with organic spelt, rye, and barley is inspired by Danish rye bread and ancient grains, and the whisky matures in new American oak barrels. As a result, it is sturdier and spicier than a classic single malt. It is categorized in our Flavor Compass under Spicy & Pungent and pairs well with savory snacks, such as rye bread with aged cheese.
What is caramel malt in the Thy Caramel Malt?
Caramel malt is malted barley that is heated further so that the sugars in the grain caramelize. Brewers use it for color and sweetness in dark beer. Thy distills the Caramel Malt from a mix of light malt, caramel malt, and a bit of beechwood-smoked malt, and lets it mature in sherry and bourbon casks. The result is a full, sweet whisky with toffee, malt, and dried fruit.
Which Thy whisky is suitable for a beginner?
Start with the Thy Single Malt.It is soft and fruity, made from light organic malt with a small proportion of beechwood smoked malt, and clearly shows the house style. If you like sweet, then move on to the Caramel Malt; if you are looking for character, try the Spelt-Rye; and if you want smoke, then Bøg is the logical next step. This way, you discover in four bottles how much difference grain and smoke make.
