Thy Whisky: the Danish estate that makes whisky from its own grain

Thy Whisky: het Deense landgoed dat whisky maakt van eigen graan - Mood4whisky

Thy Whisky is a family distillery in northwestern Denmark that does something few producers worldwide dare to do: do everything themselves. The grain is grown on their own estate, malted, distilled, and matured in-house — not a single step is outsourced. This approach earned the distillery the title "European Whisky of the Year" in 2020, and the title of Single Estate Distillery of the Year at the Icons of Whisky Awards in London in 2024.

An estate of eight generations

Gyrup Estate has been in the hands of the same family since 1773. Whisky is therefore a relatively young chapter in a much older history of farmers working their own land. In 2010, Nicolaj Nicolajsen, of the seventh generation, filled the first experimental cask with barley from their own land — in collaboration with a local brewery and a German malt house, as the farm did not yet have its own malt house or distillery at the time. The first bottling followed in 2014.

The real turning point came in 2015, when the eighth generation — Ellen, Andreas, Marie, and Jakob — returned to Thy from Copenhagen. They took the step towards a fully-fledged, independent distillery, with the goal of being able to produce the whisky entirely on the estate itself: from grain to glass, without any external intermediaries.

From our own field to glass

In 2019, a new 1,000-liter pot still arrived, bringing things full circle: Thy Whisky could henceforth produce entirely self-sufficiently. The grain — including the old "Imperial" barley variety retrieved from a Scandinavian gene bank — is grown exclusively on the estate's own 500 hectares. Three custom-built malting drums process 6-ton batches over nine days, after which the malt is dried in the traditional Danish manner over beechwood smoke.

The distillation method is unique: whereas most whisky is distilled two or three times, Thy Whisky uses a single distillation with an additional condenser that returns water vapor and heavy oils to the still. This results in a purer alcohol, while simultaneously retaining more intensity of malt and grain aromas than one would expect from a single distillation. The water comes from a private spring on the estate, and the casks mature in an open warehouse exposed directly to the sea air of the Danish west coast.

Recognition for a small estate

For a distillery that has only been operating fully under its own steam since 2019 — with an estimated annual production of 50,000 liters — the recognition is remarkably significant. Thy Whisky No. 9 "Bøg", made from beechwood-smoked malt, was named European Whisky of the Year in Jim Murray's Whisky Bible 2020.In 2024, the title Single Estate Distillery of the Year followed at the Icons of Whisky Awards in London, a recognition of precisely the principle the family has been committed to since 2015: keeping every step, from seed to bottle, in their own hands.

Why Thy Whisky is worth it

Thy Whisky demonstrates that you do not need centuries-old Scottish tradition to create a whisky with a distinct character of its own — what you do need is a farm, patience, and the willingness to do every step yourself. The result is a whisky that tells as much about Danish farmland as it does about distillation technique, with a smoky, spicy signature directly traceable to the beechwood smoke and saline maturation on the Danish west coast.
