Silkie

Silkie The Dark Silkie Irish Whiskey

The Dark Silkie is the richer, sherry-led side of the Silkie story: a deeper amber and fuller than the Legendary, with dried fruit and spice instead of honey and apple.

Why I chose this

Anyone who already knows the Legendary Silkie and wants a little more depth gets this Dark Silkie from me. I like to pour it in the winter months, after dinner, when the conversation carries on a while longer. It stays approachable, but has just a bit more to say.

Frequently Asked Questions

Where does The Dark Silkie get its dark colour?

Mainly from maturation in sherry casks, which give the whiskey a deeper amber colour and notes of dried fruit. The producer does not state whether colouring has also been added, so we can neither confirm nor rule that out. In flavour it is clearly fuller and spicier than the lighter Legendary.

Is The Dark Silkie stronger than The Legendary Silkie?

Yes, The Dark Silkie is bottled at 46% ABV, compared with 40% for the Legendary. That gives it more body and a warmer finish. If you find it too powerful neat, add a few drops of water; the spice and dried fruit often come through even better.

What food goes with The Dark Silkie?

Anything with warm spices and dried fruit. Speculoos biscuits, dried figs or a piece of dark chocolate all pair nicely with the sherry maturation. That makes it a lovely whiskey with coffee or to round off a dinner in the winter months.
