Fettercairn is a Highland distillery with a unique cooling system (a "ring" of cold water around the necks of the pot stills), resulting in a distinctive tropical, pineapple-like fruitiness. Cadenhead bottled this 19-year-old in its Original Collection, unfiltered and uncoloured.
Our Flavor Compass divides whisky into four flavor areas. The dot indicates where this bottle stands.

For lovers of tropical, fruity whiskies with a technically distinctive story (Fettercairn's unique cooling system).
Pineapple in a Highland whisky: when I first tasted this Fettercairn, it made me smile. Nineteen years in bourbon casks have made that tropical fruitiness round and ripe. I like pouring it for friends who think older whisky always has to be heavy and woody.
Mainly from the spirit itself. Fettercairn runs cold water down the necks of its pot stills through a cooling ring. This creates extra reflux: heavier vapours condense and fall back into the still, leaving a lighter, fruitier spirit. Nineteen years in ex-bourbon casks then add honey and a round, waxy texture.
Light, fruity desserts. Think pineapple carpaccio, a coconut macaroon or a light custard: they bring out the tropical fruit and honey in the whisky. Avoid heavily spiced or salty dishes, as they overpower its subtle, waxy texture. Serve the whisky after dinner, at room temperature and without ice.
It is the range in which Cadenhead bottles whiskies from various distilleries, always without chill filtration and without added colouring. This Fettercairn was bottled in that range at 46% ABV, so not at cask strength. That means it is ready to enjoy neat, while its natural oils and aromas are preserved.
