For anyone looking for a rare, red-fruited wine cask whisky from one of the pioneers of English whisky.
I chose this bottle for the combination: eleven years of English single malt from St. George's, finished in Portuguese Cabernet Sauvignon casks. It comes out at my table when wine drinkers join who are still a little wary of whisky; the red fruit makes the step smaller. After that, the conversation turns to Norfolk all by itself.
No, this single malt is unpeated. Its character comes from maturation: first ex-bourbon, then a finish in Portuguese Cabernet Sauvignon casks, which adds red fruit and soft tannin. If you are after smoke from the same distillery, the Red Range Cask Strength Smoked in our range is its counterpart.
Mainly red fruit and structure. The wood previously held red wine and, during the finish, releases notes of blackberry and redcurrant, plus a light tannin that gives a dry-sweet finish. That is why this 11-year-old sits in Rich & Sweet on our Flavour Compass.
A mature cheddar works very well: the salt and strength of the cheese pick up the red fruit and tannin nicely. For a sweet alternative, choose a red fruit tart or a piece of dark chocolate. Serve the whisky neat at room temperature, perhaps with a few drops of water.
